En la provincia de Ja\u00e9n, esta jornada va mucho m\u00e1s all\u00e1 de la conmemoraci\u00f3n institucional: es tambi\u00e9n una ocasi\u00f3n para reivindicar el orgullo de una identidad forjada entre olivares, saberes populares y una cocina que habla de historia, territorio y resistencia. La gastronom\u00eda jiennense, a menudo silenciada frente a otras m\u00e1s medi\u00e1ticas, cobra protagonismo en esta fecha como uno de los pilares m\u00e1s genuinos del ser andaluz.<\/p>\n<h3 data-start=\"738\" data-end=\"762\" style=\"text-align: justify;\">Cocinar lo que somos<\/h3>\n<p data-start=\"764\" data-end=\"1337\" style=\"text-align: justify;\">La cocina tradicional de Ja\u00e9n no se entiende sin su contexto geogr\u00e1fico y cultural. Con influencias moriscas, campesinas y serranas, el recetario provincial ha sabido mantener sus ra\u00edces a trav\u00e9s de platos humildes pero llenos de car\u00e1cter. En el D\u00eda de Andaluc\u00eda, muchos restaurantes y hogares recuperan elaboraciones que simbolizan este patrimonio culinario. Los <em data-start=\"1145\" data-end=\"1155\">andrajos<\/em>, el <em data-start=\"1160\" data-end=\"1169\">rin-ran<\/em> de la Sierra de Segura, el <em data-start=\"1197\" data-end=\"1219\">gazpacho de invierno<\/em> o las <em data-start=\"1226\" data-end=\"1241\">gachas dulces<\/em> se convierten en protagonistas de men\u00fas tem\u00e1ticos que buscan conectar con la memoria colectiva.<\/p>\n<p data-start=\"1339\" data-end=\"1812\" style=\"text-align: justify;\">Municipios como Cazorla, Martos o Torredelcampo organizan durante esta semana actividades gastron\u00f3micas vinculadas al D\u00eda de Andaluc\u00eda, desde degustaciones populares hasta concursos de cocina tradicional. En Frailes, por ejemplo, no es raro encontrar jornadas en torno a la cocina conventual, mientras que en Linares se suele rendir homenaje al <em data-start=\"1684\" data-end=\"1695\">ajoharina<\/em>, una receta que mezcla harina, ajo y pimientos secos con una intensidad de sabor que sorprende al viajero primerizo.<\/p>\n<h3 data-start=\"1814\" data-end=\"1866\" style=\"text-align: justify;\">Turismo de ra\u00edces: la hosteler\u00eda como embajadora<\/h3>\n<p data-start=\"1868\" data-end=\"2312\" style=\"text-align: justify;\">La hosteler\u00eda jiennense ha encontrado en estas celebraciones una forma de reivindicar su papel como <strong data-start=\"1968\" data-end=\"2007\">puente entre tradici\u00f3n y modernidad<\/strong>. Al apostar por men\u00fas con productos locales \u2014como el cordero segure\u00f1o, las legumbres de la Loma o el aceite de oliva virgen extra reci\u00e9n elaborado\u2014, muchos establecimientos no solo fidelizan al cliente local, sino que se convierten en un <strong data-start=\"2246\" data-end=\"2311\">reclamo tur\u00edstico para quienes buscan experiencias aut\u00e9nticas<\/strong>.<\/p>\n<p data-start=\"2314\" data-end=\"2687\" style=\"text-align: justify;\">Algunos alojamientos rurales han incorporado talleres de cocina jiennense como parte de su oferta tur\u00edstica para estos d\u00edas, permitiendo al visitante aprender a preparar platos tradicionales con ingredientes de la zona. Esta apuesta por el turismo experiencial refuerza un modelo m\u00e1s sostenible, que dinamiza el medio rural y visibiliza la riqueza cultural de la provincia.<\/p>\n<h3 data-start=\"2689\" data-end=\"2714\" style=\"text-align: justify;\">Saborear la identidad<\/h3>\n<p data-start=\"2716\" data-end=\"3048\" style=\"text-align: justify;\">El D\u00eda de Andaluc\u00eda es, sin duda, una oportunidad para celebrar lo que une a esta tierra diversa y plural.
